Dressing
Ingredients:

olive oil

1 red chilli

juice of 1 lemon

2 Tbsp brown sugar

salt and pepper
Method:
- In a blender, add chilli, lemon juice, sugar and seasoning and while motor is running, slowly drizzle in the olive oil to create a dressing.
Salad
Ingredients:

1 cup cooked Bulgur wheat
-
250g cherry tomatoes, halved

2 mielies, cooked and de-stalked

1 bunch spring onion, sliced

fresh coriander
-
1 avocado, peeled and cubed
-
bunch of baby spinach leaves, washed, dried and roughly chopped
Method:

Combine all the ingredients in a mixing bowl.
Plate salad onto small plates, drizzle with the dressing and serve with a glass of DUKE Sauvignon Blanc.
