Mexican bulgur wheat salad

Sauvignon Blanc

Serves 4

  • olive oil

  • 1 red chilli

  • juice of 1 lemon

  • 2 Tbsp brown sugar

  • salt and pepper


  1. In a blender, add chilli, lemon juice, sugar and seasoning and while motor is running, slowly drizzle in the olive oil to create a dressing.


  • 1 cup cooked Bulgur wheat

  • 250g cherry tomatoes, halved

  • 2 mielies, cooked and de-stalked

  • 1 bunch spring onion, sliced

  • fresh coriander

  • 1 avocado, peeled and cubed

  • bunch of baby spinach leaves, washed, dried and roughly chopped


  1. Combine all the ingredients in a mixing bowl.

Plate salad onto small plates, drizzle with the dressing and serve with a glass of DUKE Sauvignon Blanc.
